This whole not being a vegetarian thing can be a little hard to wrap my head around sometimes. Like when I look at my sandwich and think, “whoa wait a sec, is that roast beef on there?” Or more likely, “who put that roast beef on my sandwich?” Like I somehow came down with a serious case of amnesia two seconds after I pulled the roast beef out of the deli paper.

For some reason, beef has been the hardest thing for me to come to terms with eating again. And by eating it again I mean eating tiny little bits of it again. I haven't had a steak, but I have had bites of a steak. I haven't ordered a hamburger, but I had a bite of a friend's. I haven't had several pieces of roast beef … except I have on this sandwich. And I liked it.

  • 2 slices of bread or a bun
  • Roast beef
  • Lettuce
  • 4 radishes, washed and thinly sliced
  • 1 tablespoon Greek yogurt or sour cream
  • 1 teaspoon wasabi powder (or freshly grated horseradish would be even better, if you have it)
  • 1 teaspoon capers
  • Salt and pepper

  1. In a small bowl, combine the radishes, yogurt or sour cream, wasabi, capers and salt and pepper.
  2. Pile the roast beef on top of the lettuce and top with lots and lots of radishes
