EASY Instant Pot Beef Chile Burritos Recipe

hey guys welcome back 
today I’m making instant pot beef enchiladas so I’m Kristen and every Monday I share an instant hot recipe with you guys I love the instant pot and it’s so much easier it is to to write it out into a recipe and so that’s why I share instant pot recipes that’s you guys so today I am making instant pot beef enchiladas 


now we’re making the insides of the enchiladas in the instant pot and then we’ll cook everything else in the oven so right now I am in the process of moving like I’ve been talking about a little bit so if you want to know a little more about my adventure you can follow me at Kristin 


 I pretty much get straight for the recipe alright guys if you’re ready for the beef enchiladas let’s head on over the in spot and I’ll show you just how easy they are so I’m gonna start with a pound of stew meat and just put it in the bottom of my instant pot next I chopped up an onion a whole onion and just threw it in there too now to give this really good flavor 






I’m gonna add two beef bullion cubes next I’m going to add 1/2 a cup of liquid whether it’s water chicken broth or beef broth on top of that I’m adding a four ounce can of green chilies now it’s time to add some flavoring we have 1 teaspoon of cumin and a 1/2 teaspoon of oregano next I’m gonna add about a cup to a cup and a half of your favorite enchilada sauce now you can add salt and pepper to taste but I feel like because of the enchilada sauce there’s enough salt in there that you should be fine with the flavoring 


so now you’re just going to mix it together a little bit and put the lid on you’re going to turn the little knob to sealing not venting and push the pressure cook button or manual button and you’re going up to 25 minutes now it takes a little while to pressurize but when it has about 10 minutes left is when I start getting everything ready so I pull out my burritos and you’re gonna grab some refried beans now on each burrito I’m gonna maybe grab 2 to 3 spoonfuls of refried beans and then just go ahead and spread it all around now I’m using whole-wheat burrito sized tortillas you can use the white burrito size tortillas if you want all right now I’m just gonna add a little bit of cheese on top 


now after I’ve gotten a few ready my timers beep so I’m gonna push the knob to quick release once all the pressures out go ahead and take off the lid and your meat should be all the way done and cooked through so using a slotted spoon I’m gonna grab the meat now if you don’t like the big chunks of meat you can shred it up into smaller pieces if you want but I actually like the big pieces so you’re gonna use a slotted spoon and then just put it right on top of the cheese on your tortilla now depending how many you want to fill my goal was to fill six because there are some kids who don’t like meat in my family and so I did three scoops of the slotted spoon onto the tortilla


 so now you’re gonna grab the two sides fold them in I’ll show you right here there we go you’re gonna fold them in a little bit and then just roll it up and you’re gonna place it seems side down in a large cooking pan all right so now I’m gonna take the sauce from the instant pot and that’s gonna be my delicious enchilada sauce that will go on top now these are called the smothered enchiladas I’m using a lot of sauce because I like a lot of sauce you’re just gonna add the cheese on top so I’m using Colby jack cheese about a cup of it and then I ran out of that 


so then I’ve just added a little bit of mozzarella on the top too now I preheated my oven to broil and I broiled them for about two to three minutes you have to watch make sure they don’t burn the point is just to get everything hot and your cheese melted now I added a little bit of parsley on top to give it a little bit of color kick obviously you don’t have to do that I will say that these were a huge hit in my family they were actually so big that we could have half’s because I have little kids so it lasted us for two meals now this recipe will make eight large burritos alright guys that’s all I have for you today thanks so much
